Ingredients: 7 cups cubed watermelon, plus wedges for garnish 6 oranges, juiced (about 2 cups) 1 3 inch knob ginger, peeled 1 teaspoon ground turmeric fresh mint springs, for garnish INSTRUCTIONS 1. Combine cubed watermelon, orange juice, ginger and turmeric in blender and blend until smooth, about 1 minute. Strain mixture through a fine mesh strainer into a pitcher filled halfway with ice. 2. Divide juice between 4 glasses filled halfway with ice. Garnish with watermelon wedges and mint springs. Serve and enjoy.

Or, it's here: 2 lbs. watermelon rind, trimmed 8 sprigs fresh dill, stem and sprigs 4 Fl oz. water 3 tsp. salt 3 tbsp. sugar 12 Fl oz. apple cider vinegar 2 Fl oz. rice wine vinegar 2 tbsp. fresh garlic, minced 1 tsp. dried dill 2 tbsp. tri colored peppercorns 1/2 tsp. ground coriander 1/2 tsp. red pepper flakes (more or less to taste) 1/4 tsp. cumin INSTRUCTIONS 1. Clean the watermelon and carefully cut away all the peel and flesh. Cut the rind into ¼ inch wide by 2 inch long strips or use a vegetable peeler to make ribbons. Some flesh on the rind is okay. Place fresh sprigs of dill and rind into a non-reactive container that will hold all rind and liquid and has a secure lid or top. 2. Place water, salt, sugar, vinegars, garlic, dried dill, peppercorns, coriander, red pepper flakes and cumin into pot and place on high heat. Once mixture simmers continue to whisk making sure that all of the ingredients are dispersed and sugar and salt have dissolved. 3. Pour the hot liquid mixture over the rind and let set for 20 minutes. After 20 minutes place and secure lid or top on the container, then label, date and store in refrigeration. 4. For the rind to reach full flavor, cure for two weeks. During the next two weeks, gently agitate the mixture every two days to ensure that the flavor is being dispersed throughout the rind. After week 1 taste the rind to ensure you have the right flavor profile and adjust as necessary. After week 2 the rind will be slightly crisp, have a pink color to the rind, and a bold flavor. Note: Pickles will soften and darken the longer they are stored. You can enjoy anytime, you don't have to wait the two weeks!

Hello. I'm looking to get into both pickling and fermentation and want to buy some good supplies. I'm a bit confused at how you make sure there is no air after re-opening and closing the jar lid. I'm afraid of contamination and mold. Do you have a video on how to get started and the best supplies/items?

Thank you for sharing but you forgot a few steps : - rince the salt and press the water out of the rinds - add puréed cooked rice, puréed nashi pear (not honey, it’s antibacterial properties will interfere with the fermentation process) and soy sauce - add dried wakame if you want the original fishy / shrimp flavour - pack the jar to leave no air and cover with a cloth to prevent insects from getting in but allow gaz exchange.

Ummm if I'm not eating the Green part then ummm why am I washing it? Is it just me or???
When you cut in to a watermelon, you're pushing in from that rind, that outer skin, whatever dirt may be on there. Whether it be from the farm or from the grocery store's shopping cart. A simple rinse under water and a pat dry with paper towels will do.

Watermelon rind can be juiced! That’s a revelation to me. Is it healthy?
Delicious sweet pickles with a tiny bit of ginger flavor! I liked it best without the rind, but rind would be ok if cut into bite sized pieces. Next time I will cut into slices with a wavy slicer blade. This time I cut into 4" spears so they fit into pint jars.
Recipe makes 1 pint. Very salty, reduce salt amount to 1/2-1 tsp, you can always add more if you'd like afterward. Otherwise very tasty! Do you add any water to your kimchi and press it down to reduce any air bubbles, so it is submerged under a brine?
Now wait...I just bought one at the local market. It checked off ALL the boxes. I got it home, cut into it, and it was a VERY light pinkish color, and the middle tasted like rind!! It was clearly NOT ripe when picked, yet the weight was right, the color of the yellow spot was perfect, the stem was NOT green...but it was terrible. Explanation???
